Weekending: Hosting Thanksgiving Dinner

Happy Monday, friends!  I cannot even believe that Thanksgiving is this week; the year is going by so quickly!  I know I've been a little MIA around here.  The past few weeks have been go go go.  We were able to have some friends from our Bible Study over on Saturday night for a mini Thanksgiving dinner.  

We have dinner with these friends once a week, but I was really excited to cook some traditional Thanksgiving food.  

I cooked a 15 lb. turkey that turned out delicious (which I was REALLY nervous about since I didn't stuff it with anything), classic green bean casserole, and corn pudding.  

I also made gravy with the left over turkey juice, flour, and Worcestershire sauce that didn't make the photo.  

Our friends bought the desserts, mashed potatoes, and cranberry sauce.  I cannot even tell you how happy it made me to have a kitchen full of all this yummy food.  

We also took out the Christmas decorations, but we've made about no progress in getting them put out.  Honestly, as excited as I am about putting up the tree, I am in a little bit of denial that the holidays are already here.  Really, time.  Please slow down.

Fried salmon patties

A good friend of mine - who is super healthy and eats mostly paleo - once told me about a recipe for salmon patties that she makes for her and her husband, so when I saw canned salmon in the grocery store the other week, I snagged a couple of cans and searched for a great recipe.  

I didn't end up going the paleo route, but I did find this recipe for salmon patties that used things I already had, so I decided to give it a try.  (I'm on a little trying new things spree, in case you were wondering.)

2 cans pink or Alaskan salmon
2 eggs
½ cup breadcrumbs
Salt and pepper to taste
3 tablespoons oil 

Drain salmon and double check that there are no skin or bones
In a medium mixing bowl, mix salmon, eggs, breadcrumbs, salt & pepper
Spoon into patties, placing on wax paper (I got about 10 patties)
Heat oil in a skillet on medium high heat
Cook patties on each side in hot oil for about 5 minutes on each side until golden brown

These actually ended up being really delicious.  I had a few of them hot right after cooking them and then the rest cold, leftover the next day at work and frankly, I liked them a little better leftover...strange.  

The next time I make these though, I will definitely use fresh, frozen salmon.  I'd never used canned salmon before and I really did not like the smell.  The patties tasted great, but I think the smell turned me off  a little at first.  I love to cook salmon at home though from frozen and never notice a strong, fishy smell.  

I feel pretty sure that I can grill some salmon fillets up, shred them, and use this same recipe.  

Apparently, these are a southern thing?  Anyone else grow up in the South and never have these before?  Or maybe it's just me...

Fall time apple crumble

Fall is for pumpkins, I think.  But I also really just love fresh apples.  I love the smell of apples baking with cinnamon on top.  I actually came home recently and hubs had apples and cinnamon boiling on the stove top to get our home smelling warm and cozy and I just loved it.  

We had some extra apples in the fridge this past week and so I went to my trusty idea source, Pinterest to find a great apple pie recipe.  Instead I found this recipe for apple crumble, and I already had all of the ingredients in the pantry, so I opted for a crumble instead...only hubs doesn't love sweets so I halved the recipe.  I'm sharing the half recipe here today.  (I also cooked these in 2 small corningware dishes for individual servings)

3 golden delicious apples, peeled and sliced into chunks
1/2 cup sugar
1 teaspoon cinnamon
1/2 stick of butter, melted
1/2 cup flour

Preheat oven to 350 degrees
Spray two individual corningware dishes 
Peel, core, and cut apples - pile into dishes
In a small bowl, mix butter, flour, cinnamon, and sugar until crumb mixture
Pile crumbs on top of apples
Bake for 25 - 30 minutes until golden brown 

Feel free to also serve with vanilla ice cream.  Or caramel drizzle (see original recipe here).  

Seriously so good.  I highly recommend this little treat.  Maybe a Thanksgiving dessert?

Coffee Talk - Weekending

When I was in graduate school, I worked a couple of part time jobs - it sounds like a lot and it was, but frankly, it wasn't the worst thing ever to have gaps of time off during the week between jobs or school.  And, if I could choose a day/morning to have off, it would have been Monday.  And if I was in a place to have Monday mornings off again, I would invite you over for coffee and catch up on our weekends.  (Because if I have Monday off, I hope you do, too.)

But I don't have Monday off, so I hope you'll just imagine with me.

I'd make some lattes (at home because it's more thrifty) for us to start.  (regular coffee, sugar, french vanilla flavored syrup and skim milk whisked in a small bowl until foamy)

I would tell you how I had such a great weekend.  On Friday, when I woke up, I felt like a whole new person.  I've mentioned before how I was fighting a cold for the last week and then Thursday night, I went to bed early, didn't wake up with a stuffed nose the entire night and felt great on Friday morning.  It's amazing what vitamin C and extra sleep will do for you when you're cold is a week old.  It was also pay-day, so I really felt like singing the whole day because it was that great.  

I would tell you about how we went trick-or-treating with kids of some good friends of ours and loved seeing them have such a fun time.  We got back home in time to catch the last bit of trick-or-treaters in our neighborhood and then headed to Chipotle for $3 boo-ritos before going to a party with some friends.  We didn't take photos of our costumes though because after a long week, I wasn't feeling too creative and literally wrapped a twin sheet around myself toga-style and called it a night.  

I would also tell you how I did 5 loads of laundry on Saturday before making the yummy apple crumble in the photo above.  (Recipe coming on Wednesday!!)  Then, I'd ask if you wanted some since there is a little bit left over.  You would and I'd be happy to share.  :)  

Later on Saturday, we went to another friends house and visited with friends that we hadn't seen in ages.  And that was so fun.  

Now it's getting colder.  There was a freeze warning last night and we finally gave in a turned our heat on.  I really love the smell when the furnace first turns on for the season, and I like the cool weather, but I can't handle it when it gets so cold.  I don't like it - not even one little bit, but I'm looking forward to the holiday season, decorating and keeping candles lit all. the. time.  

And it's Monday.  I think work will be pretty busy this week.  Busy, but not bad and I'm thankful for my job so I really can't complain too much.  

By now, we probably need to get going because we can't just drink coffee all day long.
